February is the best month of the year for weather, and the busiest. Margaret River averages 27°C and just 12mm of rain in February — tied with January as the driest. The region has a Mediterranean climate, which means the winter is where all the rain falls: 194mm in July against 12mm in February. For the beaches, the surf and the cellar doors, February is as good as it gets. The trade-off is that everyone else knows it — this is peak season and the accommodation prices say so.

If the dates are movable
March and November are the sweet spots — 23 to 26°C, under 35mm of rain, and a fraction of the people. October and September add the wildflowers, which in Western Australia is the largest display of its kind anywhere. February is genuinely the best weather; those months are the best trips.
